It’s hard to find good Mexican food in London and it’s hard to not gain weight when you’re in Europe eating out every night. So tonight I stayed in and combined my love for healthy, vegetarian food with my other love, hot sauce, and made my own low calorie Mexican feast. Topped with non-fat greek yogurt instead of sour cream and Nando’s famous peri-peri hot sauce instead of salad dressing, this meal will leave you full and satisfied, packing 25 grams of protein for under 300 calories. And it takes less than 10 minutes to prepare. Perfección!
Super Skinny Mexican Salad
- 1/2 head butter leaf lettuce
- 1/2 cup canned kidney beans (great source of protein & fiber)
- 1 cup cherry tomatoes
- 2 medium bell peppers (high in Vitamin C)
- 1/2 red onion
- 6oz. Fage Total 0% Greek Yogurt (live active yogurt cultures = good bugs for your belly + 18 grams protein!)
Flash fry peppers and onions with salt, pepper and garlic seasoning and set aside. Chop lettuce and place in a large bowl topped with kidney beans and tomatoes. Add peppers and onions once cool, top with greek yogurt and hot sauce and enjoy!
